Tropical Salad
Servings: 8 portions
Ingredients:
Dressing:
– 100 ml of fresh lemon juice
– 100 ml of honey “Flor de Lanranjeira”
– 200 ml of sunflower oil
– 30 grams of mint
Salad:
– 3 papayas cut in 2 cms spheres
– 1 kg of melon cut in 2 cms spheres
– 1 kg of prawns or 8 headless boiled prawns per portion
– Chopped chives
Preparation:
1- For the dressing, mix all the ingredients until the dressing thickens to creamy.
2- Add the melon and the papaya
3- Leave to marinate for 10 minutes
4- Plate and place the prawns on the top
5- Sprinkle with chives
